Essential Duties and Responsibilities:
- Operates vacuum and/or open flame candy cooker
- Prepares rework candy for recycling
- Moves candy through various stages of manufacturing
- Cleans work area
- Monitors all temperature, vacuum, and pressure gages
- Incorporates RedZone into daily practices
- Cooling candy batch to correct temperature
- Adding correct amount of color, flavor, and other ingredients to candy batches
- Moving candy batch through production process in a timely and correct manner
- Cleans and sweeps work areas
- Unwrapping candy
- Taking all dirty trays/utensils/equipment to steam room
- Sanitizing utensils/equipment
- Monitoring quality of wrapped and bagged finished product for acceptance or rejection

Employees can sit between batches. Candy batches are pushed, pulled, and picked up by employees every 5-10 minutes while the employee is standing. This requires bending and twisting also. A partial batch (approx. 65 - 85 lbs) is carried about 6 - 8 feet from cooling table to pulling machine. Other ingredients and rework is added to the batch while on pulling machine and two employees move the batch (approx. 100 lbs) about 6 feet from the pulling machine to the warming table. The final candy batch (approx. 80 - 125 lbs) is prepared and moved about 50 feet on a “stretcher” type table with wheels by two employees.
